How to read these numbers
What each number means, which window it covers, and the rules behind the flags.
Time windows
Every number says which of these it uses
- This week
- Monday to Sunday, Oct 19 to Oct 25, 2026.
- vs last week
- This week against the Monday-to-Sunday week before it.
- 8-week trend
- A straight line through the last 8 weekly totals, as a share of the 8-week average. Up or down more than 3% = climbing or declining; within 3% = flat. The main trend measure, because one week can mislead.
- vs last year
- The same Monday-to-Sunday week last year, shifted so both weeks hold the same holiday. Only stores open then count.
- Month and year to date
- Each day against the same weekday 52 weeks earlier (364 days back), the same alignment as the weekly comp, so week, month and year to date agree. Comp stores only.
Sales terms
- Net sales
- Check totals before tax and tips, minus gift cards and other deferred items. Toast's definition.
- Transactions
- Orders (Toast checks). Toast's guest-count field is not reliable, so the report counts transactions, not guests.
- Average ticket
- Net sales divided by transactions.
- AWS
- Average weekly sales per store, year to date, for the weeks each store was open.
Comps
Same-store = 8 stores open 18+ months, listed on the Comps tab
- Joining the base
- A store joins comps the first full Monday-to-Sunday week after it has been open 18 months, so the grand-opening bump is never compared.
- Like for like
- Days are left out when last year's data for that store is not comparable: Tempe, third-party orders were not yet in Toast (Jan 1, 2025 to Feb 28, 2025).
- Maturing
- Open less than 18 months. Read on the New Store Sales Ramp (New stores tab) until the store joins comps.
Channels and dayparts
- First-party
- Dine-in, take-out, phone, online ordering and first-party delivery.
- Third-party
- DoorDash, Uber Eats, Grubhub and Postmates, delivery and pickup.
- Catering
- Catering orders in Toast plus ezCater.
- Dayparts
- Keyed on the time the order was opened. Before open = before the posted opening time; lunch = open to 5 PM; dinner = 5 PM to close. Catering is excluded.
Attention rules
- Signals
- Several signals stack up over 8 weeks: a decline in sales or transactions, falling well behind the rest of the company, a double-digit drop vs last year, a sharp week with no holiday to explain it, or two or more 1–2★ reviews.
- Rest of network
- All stores open 13+ weeks, venues excluded, minus the store itself. The baseline a store is measured against.
- What moved
- Single-week swings of 15% or more, or well outside the store's trailing 7 weeks.
- Operations flags
- Our standards, set by leadership: labor over 30%, SPLH under $45, comps 4%+ of gross, discounts 2.5%+, voids 2%+, 5+ items 86'd, a week under 3.9★ on 2+ reviews.
- Labor %
- Hourly time-clock wages as a share of net sales. "Clock coverage partial" = the time clock looks under-used at that store, so the figure is an indicator, not payroll.
- SPLH
- Net sales ÷ hourly labor hours.
- 86'd items
- Different menu items that went out of stock during the week and stayed out for at least two snapshots (about 2 hours or more), from snapshots every two hours.
- Comps, discounts, voids
- Comps = comp discounts plus fully comped checks. Discounts = promos, loyalty and employee meals. Voids = items voided before payment, with any refunds. Each as a share of gross sales.
- Largest order
- The biggest single check of the week by net sales, with its channel and local hour. No order detail is stored.
- Local events
- For the stores with a high or low week, a web search looks for events, closures and news near the store inside that week. Each one shows its source. A week can coincide with an event; the report never says the event caused it.
Year-end forecast
Built from our current run rate of about $58.9K a day across the company, adjusted by Bluebird Kitchen's own October to December pattern from 2024 and 2025 (Oct about 0% above September, Nov about 2% below September, Dec about 3% above September per store per day, with Christmas closed). New stores are added from their scheduled dates at our typical first-eight-weeks volume of about $31.1K a week. Low case: openings slip three weeks and sales run 3% softer. High case: everything opens on time and sales run 2% stronger. Salt Lake City are expected in early 2027, so they aren't included.
This week's data notes
- Last-year alignment
- Labor Day fell in the same-weekday week last year, so the comparison week is Aug 25–Aug 31, 2025 (neither week includes it).
- Labor Day fell a week earlier last year, so the comparison week is Sep 1–Sep 7, 2025 (both weeks include it).
- Notes
- Open dates to confirm (kept out of the same-store base): Portland.
